{"id":842,"date":"2021-10-08T00:22:25","date_gmt":"2021-10-07T20:22:25","guid":{"rendered":""},"modified":"-0001-11-30T00:00:00","modified_gmt":"-0001-11-30T00:00:00","slug":"CaramelizedBanana-Bread","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/10\/08\/CaramelizedBanana-Bread\/","title":{"rendered":"CaramelizedBanana\u00a0Bread"},"content":{"rendered":"<p>Ingredients:<br \/>\nLoaf<br \/>\n   Cooking spray, for greasing the loaf pan<br \/>\n  2 cupsall-purpose flour<br \/>\n  1 teaspoonbaking powder<br \/>\n  3\/4 teaspoonground cinnamon<br \/>\n  1\/2 teaspoonbaking soda<br \/>\n  1\/4 teaspoonkosher salt<br \/>\n  1\/2 cupunsweetened soy milk, at room temperature<br \/>\n  1\/3 cupmelted unsalted vegan butter<br \/>\n  1\/4 cupmaple syrup<br \/>\n  1 teaspoonvanilla extract<br \/>\nCaramelized Bananas<br \/>\n  2 tablespoonsunsalted vegan butter<br \/>\n  2 medium ripe bananas (about 15 ounces), peeled and sliced into \u00bc-inch slices<br \/>\n  1\/4 cupmaple syrup<br \/>\n  2 tablespoonsdark brown sugar<br \/>\n  1\/4 teaspoonground cinnamon<\/p>\n<p>Directions: <\/p>\n<p>Heat the oven to 350\u00b0F and grease a 9&#215;5-inch loaf pan with cooking spray.<br \/>\nIn a large bowl, whisk together the flour, baking powder, cinnamon, baking soda, and salt. Set aside.<br \/>\nIn a medium bowl, whisk together the soy milk, melted butter, maple syrup, and vanilla. Set aside.<br \/>\nPrepare the caramelized bananas: Heat a medium nonstick skillet over medium heat. Once hot, add the butter and heat until melted and bubbling, about 1 minute.<br \/>\nArrange the banana slices in the pan and cook for 3 minutes or until slightly golden and fragrant.<br \/>\nPour in the maple syrup and sprinkle in the brown sugar and cinnamon. Increase the heat to medium-high and cook for another 3 minutes, or until the bananas are caramelized and soft in texture on the undersides, but still hold their shape.<br \/>\nUsing a silicone spatula, flip the bananas on their backsides and cook for 2 more minutes, or until caramelized all over and very soft in texture. Turn off the heat.<br \/>\nMash the bananas in the pan using your silicone spatula or the back of a wooden spoon, until mostly smooth\u2014it\u2019s okay if some chunks remain. Transfer the caramelized bananas to the soy milk mixture. Whisk together. Transfer into the bowl with the dry ingredients.<br \/>\nWhisk until no white flour streaks remain, but be careful not to overmix.
