Coat a 9&#215;13-inch baking pan with cooking spray.<\/p>\n<p>Mix potatoes, carrots, onion, balsamic vinegar, butter, thyme, garlic, salt, and pepper together in a large glass bowl. Spread mixture into the prepared pan in an even layer.
