{"id":783,"date":"2021-10-07T07:38:52","date_gmt":"2021-10-07T03:38:52","guid":{"rendered":""},"modified":"-0001-11-30T00:00:00","modified_gmt":"-0001-11-30T00:00:00","slug":"Gourmet-Mushroom-Risotto","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/10\/07\/Gourmet-Mushroom-Risotto\/","title":{"rendered":"Gourmet Mushroom Risotto"},"content":{"rendered":"<p>Ingredients:<br \/>\n6 cups chicken broth, divided<br \/>\n3 tablespoons olive oil, divided<br \/>\n1 pound portobello mushrooms, thinly sliced<br \/>\n1 pound white mushrooms, thinly sliced<br \/>\n2 shallots, diced<br \/>\n1\u2009\u00bd cups Arborio rice<br \/>\n\u00bd cup dry white wine<br \/>\nsea salt to taste<br \/>\nfreshly ground black pepper to taste<br \/>\n3 tablespoons finely chopped chives<br \/>\n4 tablespoons butter<br \/>\n\u2153 cup freshly grated Parmesan cheese<\/p>\n<p>Directions:<br \/>\nIn a saucepan, warm the broth over low heat.<\/p>\n<p>Warm 2 tablespoons olive oil in a large saucepan over medium-high heat. Stir in the mushrooms, and cook until soft, about 3 minutes. Remove mushrooms and their liquid, and set aside.<\/p>\n<p>Add 1 tablespoon olive oil to skillet,  and stir in the shallots. Cook 1 minute. Add rice, stirring to coat with oil, about 2 minutes. When the rice has taken on a pale, golden color, pour in wine, stirring constantly until the wine is fully absorbed. Add 1\/2 cup broth to the rice, and stir until the broth is absorbed. Continue adding broth 1\/2 cup at a time, stirring continuously, until the liquid is absorbed and the rice is al dente, about 15 to 20 minutes.<\/p>\n<p>Remove from heat, and stir in mushrooms with their liquid, butter, chives, and parmesan.
