{"id":728,"date":"2021-10-06T22:00:45","date_gmt":"2021-10-06T18:00:45","guid":{"rendered":""},"modified":"-0001-11-30T00:00:00","modified_gmt":"-0001-11-30T00:00:00","slug":"Stuffed-Peppers-My-Way","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/10\/06\/Stuffed-Peppers-My-Way\/","title":{"rendered":"Stuffed Peppers My Way"},"content":{"rendered":"<p>Ingredients:<br \/>\n1 cup water<br \/>\n\u00bd cup uncooked Arborio rice<br \/>\n2 green bell peppers, halved and seeded<br \/>\n1 tablespoon olive oil<br \/>\n2 green onions, thinly sliced<br \/>\n1 teaspoon dried basil<br \/>\n1 teaspoon Italian seasoning<br \/>\n1 teaspoon salt<br \/>\n1 pinch ground black pepper<br \/>\n1 tomato, diced<br \/>\n\u00bd cup crumbled feta cheese<\/p>\n<p>Directions:<br \/>\nPreheat oven to 400 degrees F (200 degrees C).  Lightly grease a baking sheet.<\/p>\n<p>In a medium saucepan, bring water to a boil. Stir in the rice. Reduce heat, cover, and simmer for 20 minutes. Remove from heat, and set aside.<\/p>\n<p>Place the peppers cut-side down on the prepared baking sheet. Roast 25 to 30 minutes in the preheated oven, or until tender and skin starts to brown.<\/p>\n<p>While the peppers are roasting, heat oil in a medium skillet over medium-high heat. Cook the onions, basil, Italian seasoning, salt, and pepper in oil for 2 to 3 minutes. Stir in the tomato, and cook for 5 minutes. Spoon in the cooked rice, and stir until heated through. Remove from heat, mix in the feta cheese, and spoon the mixture into the pepper halves.<\/p>\n<p>Return to the oven for 5 minutes.
