{"id":667,"date":"2021-10-05T03:00:26","date_gmt":"2021-10-04T23:00:26","guid":{"rendered":""},"modified":"-0001-11-30T00:00:00","modified_gmt":"-0001-11-30T00:00:00","slug":"Roasted-Cherry-Tomato-Pasta","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/10\/05\/Roasted-Cherry-Tomato-Pasta\/","title":{"rendered":"Roasted Cherry Tomato Pasta"},"content":{"rendered":"<p>Ingredients:<br \/>\n2 pounds red cherry tomatoes, halved<br \/>\n\u00bd pound tomatoes, roughly chopped<br \/>\n3 cloves garlic, thinly sliced<br \/>\n3 tablespoons chicken broth<br \/>\n1 tablespoon olive oil<br \/>\n1 tablespoon balsamic vinegar<br \/>\n1 teaspoon red pepper flakes<br \/>\n\u00be teaspoon salt<br \/>\n\u00bd teaspoon freshly ground black pepper<br \/>\n\u00bc cup julienned fresh basil leaves<br \/>\n2 tablespoons chopped flat-leaf parsley<br \/>\n1 tablespoon chopped fresh oregano<br \/>\n12 ounces whole wheat linguine<br \/>\n\u00bd (16 ounce) container low-fat ricotta cheese<br \/>\n\u00bd cup finely shredded Pecorino Romano cheese<\/p>\n<p>Directions:<br \/>\nPreheat the oven to 350 degrees F (175 degrees C).<\/p>\n<p>Combine all tomatoes, garlic, chicken broth, olive oil, balsamic vinegar, red pepper flakes, salt, and pepper in a large, glass baking dish; toss to coat.<\/p>\n<p>Roast in the middle of the preheated oven, stirring regularly, until tomatoes are tender, about 45 minutes. Remove from the oven and stir in basil, parsley, and oregano.<\/p>\n<p>When the tomatoes have been roasting for about 35 minutes, bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, 5 to 7 minutes (cook for 2 minutes less than package directions.) Drain and return to the pot.<\/p>\n<p>Add the roasted tomatoes and herbs to the linguine and cook over medium-low heat for 2 minutes.
