{"id":537,"date":"2021-10-05T15:25:33","date_gmt":"2021-10-05T11:25:33","guid":{"rendered":""},"modified":"-0001-11-30T00:00:00","modified_gmt":"-0001-11-30T00:00:00","slug":"Authentic-Louisiana-Red-Beans-and-Rice","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/10\/05\/Authentic-Louisiana-Red-Beans-and-Rice\/","title":{"rendered":"Authentic Louisiana Red Beans and Rice"},"content":{"rendered":"<p>Ingredients:<br \/>\n1 pound dry kidney beans<br \/>\n\u00bc cup olive oil<br \/>\n1 large onion, chopped<br \/>\n1 green bell pepper, chopped<br \/>\n2 tablespoons minced garlic<br \/>\n2 stalks celery, chopped<br \/>\n6 cups water<br \/>\n2 bay leaves<br \/>\n\u00bd teaspoon cayenne pepper<br \/>\n1 teaspoon dried thyme<br \/>\n\u00bc teaspoon dried sage<br \/>\n1 tablespoon dried parsley<br \/>\n1 teaspoon Cajun seasoning<br \/>\n1 pound andouille sausage, sliced<br \/>\n4 cups water<br \/>\n2 cups long grain white rice<\/p>\n<p>Directions:<br \/>\nRinse beans, and then soak in a large pot of water overnight.<\/p>\n<p>In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.<\/p>\n<p>Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1\/2 hours.<\/p>\n<p>Stir sausage into beans, and continue to simmer for 30 minutes.<\/p>\n<p>Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes.
