{"id":532,"date":"2021-10-05T14:44:39","date_gmt":"2021-10-05T10:44:39","guid":{"rendered":""},"modified":"-0001-11-30T00:00:00","modified_gmt":"-0001-11-30T00:00:00","slug":"Wisconsin-Cheese-Soup-I","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/10\/05\/Wisconsin-Cheese-Soup-I\/","title":{"rendered":"Wisconsin Cheese Soup I"},"content":{"rendered":"<p>Ingredients:<br \/>\n5 tablespoons margarine<br \/>\n2 carrots, chopped<br \/>\n2 stalks celery, chopped<br \/>\n1 green bell pepper, chopped<br \/>\n1 onion, chopped<br \/>\n5 button mushrooms, chopped<br \/>\n\u00bd cup chopped ham<br \/>\n\u00bd cup all-purpose flour<br \/>\n2 tablespoons cornstarch<br \/>\n4 cups chicken broth<br \/>\n4 cups milk<br \/>\n\u00bd teaspoon paprika<br \/>\n\u00bc teaspoon ground cayenne pepper<br \/>\n\u00bd teaspoon ground mustard<br \/>\n2 cups shredded sharp Cheddar cheese<br \/>\nsalt to taste<br \/>\nground black pepper to taste<\/p>\n<p>Directions:<br \/>\nIn a large heavy kettle, melt butter or margarine.  Add carrots, celery,  onion, green pepper, mushrooms, and ham; cook over medium heat until vegetables are crisp tender, about 10 minutes, stirring occasionally.  Do not brown.<\/p>\n<p>Stir in flour and cornstarch; cook, stirring  constantly, about 3 minutes.  Add broth and cook, stirring, until slightly thickened.  Add milk, paprika, cayenne, and mustard.<\/p>\n<p>Stir in cheese gradually, stirring until cheese is melted.  To avoid curdling, do not allow soup to boil after cheese is added.  Season to taste with salt and pepper.
