{"id":1855,"date":"2023-06-01T04:59:10","date_gmt":"2023-06-01T00:59:10","guid":{"rendered":""},"modified":"2023-06-01T04:59:10","modified_gmt":"2023-06-01T00:59:10","slug":"GriddledTuna-Avocado-Wrap","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2023\/06\/01\/GriddledTuna-Avocado-Wrap\/","title":{"rendered":"GriddledTuna-Avocado\u00a0Wrap"},"content":{"rendered":"<p>Ingredients:<br \/>\n  2 large California Avocados, halved, peeled and seeded, divided<br \/>\n  2 tablespoonsfreshly squeezed lemon juice<br \/>\n  2 teaspoonsextra-virgin olive oil, divided<br \/>\n  \u00bd teaspoonskosher salt, plus more to taste<br \/>\n  \u00bc teaspoonsblack pepper, plus more to taste<br \/>\n  2 (5-ounce) cans wild-caught tuna, drained<br \/>\n  \u00bd bell pepper, seeds removed and sliced into long strips<br \/>\n  \u00bc red onion, thinly sliced<br \/>\n  8 slices pickled jalape\u00f1o, halved<br \/>\n  4 (10-inch) whole-wheat tortillas or wraps<\/p>\n<p>Directions: <\/p>\n<p>Mash two avocado halves with a fork.<br \/>\nAdd the lemon juice, 1 teaspoon olive oil, salt, and pepper to the avocado mash and whisk well until it turns into a creamy sauce. Mix in the tuna, check and adjust for seasoning, then set aside.<br \/>\nCut the remaining two avocado halves into chunks and place in a small bowl, making sure to keep the chunks as whole as possible.<br \/>\nHeat a large griddle pan (or non-stick pan) over medium heat.<br \/>\nDivide the tuna-avocado mix evenly between the tortillas or wraps (about \u00bd cup each), spooning it onto the center of each and being sure to leave space on all sides. Top with bell pepper, onion, avocado, and jalape\u00f1o. Tightly fold the wraps.<br \/>\nPour the remaining 1 teaspoon olive oil into the hot pan and swirl it around to coat well. Place the wraps on the pan two at a time and toast, about 2 minutes on each side.
