{"id":1844,"date":"2023-06-01T03:05:33","date_gmt":"2023-05-31T23:05:33","guid":{"rendered":""},"modified":"2023-06-01T03:05:33","modified_gmt":"2023-05-31T23:05:33","slug":"StuffedPeppersWithChicken-Rice","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2023\/06\/01\/StuffedPeppersWithChicken-Rice\/","title":{"rendered":"StuffedPeppersWithChicken&#038;\u00a0Rice"},"content":{"rendered":"<p>Ingredients:<br \/>\nFor the peppers:<br \/>\n  6 bell peppers (any color), halved and seeded<br \/>\n  6 tablespoonsolive oil<br \/>\n   Kosher salt, to taste<br \/>\n   Black pepper, to taste<br \/>\nFor the stuffing:<br \/>\n  1 cupbasmati or other long-grain white rice (about 3 cups when cooked)<br \/>\n  1 medium yellow onion, finely chopped<br \/>\n  2 medium zucchini, diced (about 2 cups when cooked)<br \/>\n  12 slices (about 2 \u00bd cups) Boar\u2019s Head FireSmith\u2122 Flame Grilled Chicken Breast, small diced<br \/>\n  \u00bc teaspoonsdried oregano<br \/>\n  2 tablespoonsfresh parsley, washed and finely minced<br \/>\n  3 tablespoonsolive oil, divided<br \/>\n  1 teaspoonkosher salt<br \/>\n  \u00bd teaspoonsfreshly ground black pepper<br \/>\n   Juice of 1 lemon<br \/>\n  6 slices Boar\u2019s Head Vermont White Cheddar Cheese, small diced<br \/>\n   Sour cream, to garnish<\/p>\n<p>Directions: <\/p>\n<p>Bake the peppers: Rub the outside of the peppers with 1 tablespoon olive oil each, and salt and pepper to taste.<br \/>\nPlace peppers on a parchment-lined sheet pant. Tent with foil and roast at 425\u00b0F for 25 to 40 minutes, or until tender.<br \/>\nMake the filling: Cook the rice according to the package instructions and set aside.<br \/>\nSeason with diced zucchini with 1 teaspoon salt, then lay it on a paper towel-lined tray and allow to sit for 10 minutes. This will absorb some of the zucchini\u2019s water and make it crispier when saut\u00e9ed.<br \/>\nFor the rice seasoning, heat a small sauce pan on medium heat and add 2 tablespoons olive oil. When the oil is hot and shimmering, add the diced onion and cook over medium-low heat until the onions are softened, about 5 to 10 minutes. Do not brown the onions.<br \/>\nHeat a saut\u00e9 pan over medium high heat and add remaining 1 tablespoon olive oil. Saut\u00e9 the zucchini, turning occasionally to cook evenly on all sides, about 5 to 10 minutes until golden brown. Take care not to burn them!<br \/>\nOnce the peppers are pre-baked, it is time to stuff them. In a large bowl, combine the rice, cooked onions and zucchini, oregano, and parsley with the diced chicken. Gently fold everything together and spoon the filling into the peppers, about \u00bd cup of filling per pepper half (or closer to \u00bc cup for smaller peppers). Top with the diced Boar&#8217;s Head Vermont White Cheddar Cheese. Place the peppers back on the parchment-lined baking sheet.
