{"id":1307,"date":"2021-12-02T15:08:02","date_gmt":"2021-12-02T11:08:02","guid":{"rendered":""},"modified":"2021-12-02T15:08:02","modified_gmt":"2021-12-02T11:08:02","slug":"ChickenTinga-Tostadas","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/12\/02\/ChickenTinga-Tostadas\/","title":{"rendered":"ChickenTinga\u00a0Tostadas"},"content":{"rendered":"<p>Ingredients:<br \/>\n  1\/2 medium white onion, chopped<br \/>\n  4 guajillo chiles (33 grams), stemmed and seeded<br \/>\n  1 to 3 chiles chipotles en adobo<br \/>\n  1 (15-ounce) can diced fire-roasted tomatoes<br \/>\n  4 cloves of garlic, peeled<br \/>\n  1 teaspoondried oregano, preferably Mexican<br \/>\n  1\/2 teaspooncoriander seeds<br \/>\n  1\/2 teaspooncumin seeds<br \/>\n  1\/2 teaspoonblack peppercorn<br \/>\n  4 1\/2 teaspoons(18 grams) kosher salt<br \/>\n  4 cupscooked, shredded chicken<br \/>\n   Tostadas, refried beans, crumbled queso fresco, chopped cilantro, chopped white onion, and lime wedges for serving<\/p>\n<p>Directions: <\/p>\n<p>Bring onion, guajillo, chipotles, tomatoes, garlic, oregano, coriander, cumin, peppercorn, salt, and 1\/4 cup water to a boil in a large saucepan over medium-high. Reduce to a simmer, cover, and cook until the chiles and onions are very tender, about 20 minutes. Remove from heat and let cool slightly. Transfer to a blender and pur\u00e9e until smooth. Set the guajillo salsa aside in a medium bowl.<br \/>\nAdd the shredded chicken to the bowl with the guajillo salsa and toss to coat.
