{"id":1253,"date":"2021-11-20T18:57:05","date_gmt":"2021-11-20T14:57:05","guid":{"rendered":""},"modified":"2021-11-20T18:57:05","modified_gmt":"2021-11-20T14:57:05","slug":"Smittys-Low-Carb-Chili","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/11\/20\/Smittys-Low-Carb-Chili\/","title":{"rendered":"Smitty&#8217;s Low-Carb Chili"},"content":{"rendered":"<p>Ingredients:<br \/>\n\u00bd head cauliflower, broken into florets<br \/>\n2 teaspoons butter, divided<br \/>\n\u00bd pound ground beef<br \/>\n\u00bd pound pork loin, diced<br \/>\n1 yellow onion, diced<br \/>\n1 green pepper, diced<br \/>\n1 (14 ounce) can diced tomatoes<br \/>\n\u00bd pound smoked sausage, cut into chunks<br \/>\n1 (1.25 ounce) package chili seasoning mix<br \/>\n2 cups beef stock, or as needed<br \/>\n1 dash hot sauce, or to taste<br \/>\nsalt and ground black pepper to taste<br \/>\nshredded Cheddar cheese, or to taste<\/p>\n<p>Directions:<br \/>\nPlace cauliflower florets in a food processor; pulse into rice-sized pieces.<\/p>\n<p>Melt 1 teaspoon butter in a large pot over medium heat. Cook and stir cauliflower &#8220;rice&#8221; until soft, 3 to 5 minutes. Transfer to a bowl.<\/p>\n<p>Cook and stir ground beef in the same pot until browned, about 5 minutes. Transfer to a bowl. Cook and stir pork loin in the pot until juices run clear, about 5 minutes. Add to beef in the bowl.<\/p>\n<p>Melt remaining 1 teaspoon butter in the pot over medium heat. Add onion and green pepper; cook and stir until soft, about 5 minutes.<\/p>\n<p>Stir tomatoes, ground beef, pork loin, smoked sausage, and chili seasoning into the pot. Pour in enough beef stock to reach desired consistency. Bring chili to a boil; reduce heat to a simmer. Stir in cauliflower &#8220;rice.&#8221;<\/p>\n<p>Season chili with hot sauce, salt, and pepper.
