{"id":1239,"date":"2021-11-17T16:33:37","date_gmt":"2021-11-17T12:33:37","guid":{"rendered":""},"modified":"2021-11-17T16:33:37","modified_gmt":"2021-11-17T12:33:37","slug":"BibimNaengmyeon-SpicyColdBuckwheat-Noodles","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/11\/17\/BibimNaengmyeon-SpicyColdBuckwheat-Noodles\/","title":{"rendered":"BibimNaengmyeon(SpicyColdBuckwheat\u00a0Noodles)"},"content":{"rendered":"<p>Ingredients:<br \/>\nQuick Pickled Radish<br \/>\n  1 medium mu (Korean radish; about 700 grams)<br \/>\n  1\/4 cupdistilled white vinegar<br \/>\n  2 tablespoonsgranulated sugar<br \/>\n  2 teaspoonsgochugaru (Korean hot red pepper flakes)<br \/>\n  1 teaspoonkosher salt<br \/>\nNoodles &amp; Assembly<br \/>\n  1 Korean pear (about 300 grams)<br \/>\n  2 scallions, divided<br \/>\n  1\/2 small yellow onion (about 50 grams), coarsely chopped<br \/>\n  3 garlic cloves<br \/>\n  3 tablespoonsgochugaru (Korean hot red pepper flakes)<br \/>\n  3 tablespoonsgochujang (Korean hot red pepper paste)<br \/>\n  2 tablespoonsrice syrup or honey<br \/>\n  1 tablespoonapple cider vinegar, plus more for serving<br \/>\n  1 tablespoonsoy sauce<br \/>\n  4 large eggs<br \/>\n  1\/2 English cucumber (about 135 grams)<br \/>\n  1 pounddried naengmyeon noodles (Korean buckwheat noodles)<br \/>\n   Toasted sesame seeds, for serving<\/p>\n<p>Directions: <\/p>\n<p>Peel the radish and using a mandoline or sharp knife, slice the radish into thin matchsticks (2\u00bd to 3 inches in length). This will yield about 4 cups.<br \/>\nTransfer the radish strips to a jar. Add the vinegar, sugar, gochugaru, and salt and shake well to combine. Refrigerate while you prepare the sauce and noodles.<br \/>\nDo Ahead: The radishes can be pickled 1 month ahead. Keep chilled.<br \/>\nPeel and coarsely chop one-half of the pear and transfer to a food processor or blender. Coarsely chop 1 scallion and add to the food processor. Add the onion, garlic, gochugaru, gochujang, rice syrup, vinegar, oil, and soy sauce and process until smooth. This will yield about 1 cup sauce. Refrigerate while you prepare the noodles and garnishes.<br \/>\nBring a large pot of water to a rolling boil. Using a slotted spoon, gently lower in the eggs. Cook, uncovered, for 8 minutes, then immediately transfer to an ice bath to cool before peeling. Peel, then slice in half lengthwise. Reserve the pot of water.<br \/>\nWhile the eggs cook, slice the cucumber and the remaining Korean pear half into thin matchsticks. Thinly slice the remaining scallion.<br \/>\nWhen ready to serve, bring the reserved pot of water to a boil. Cook the noodles for 4 minutes, until slightly chewy and elastic. Drain and rinse well with cold water.<br \/>\nDivide the noodles among 4 large shallow serving bowls. Spoon about \u00bc cup of the bibim sauce over each bowl of noodles.<br \/>\nPlace the sliced pear, sliced cucumber, pickled radishes, and 2 egg halves on top of the noodles. Drizzle with some oil and sprinkle with the scallions and seeds.<br \/>\nWhen ready to eat, use scissors to cut through the noodles a few times to make them easier to mix and eat.<br \/>\nDo Ahead: The bibim sauce can be made 1 month ahead.
