{"id":1196,"date":"2021-11-09T17:56:00","date_gmt":"2021-11-09T13:56:00","guid":{"rendered":""},"modified":"2021-11-09T17:56:00","modified_gmt":"2021-11-09T13:56:00","slug":"Roasted-Acorn-Squash-Soup","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/11\/09\/Roasted-Acorn-Squash-Soup\/","title":{"rendered":"Roasted Acorn Squash Soup"},"content":{"rendered":"<p>Ingredients:<br \/>\n2 acorn squash, halved and seeded<br \/>\nwater, as needed<br \/>\n3 tablespoons unsalted butter<br \/>\n1 large sweet onion, chopped<br \/>\n1 large carrot, peeled and chopped<br \/>\n1 clove garlic, minced<br \/>\n3\u2009\u00bd cups low-sodium chicken stock<br \/>\n\u00bc cup half-and-half<br \/>\n\u00bd teaspoon ground nutmeg<br \/>\n\u00bd teaspoon ground cinnamon<br \/>\n1 pinch salt and ground black pepper to taste<\/p>\n<p>Directions:<br \/>\nPreheat oven to 400 degrees F (200 degrees C).<\/p>\n<p>Put squash into a baking dish with the cut side down. Pour enough water into the baking dish to cover the bottom.<\/p>\n<p>Bake in preheated oven until the flesh of the squash is easily pricked with a fork, about 45 minutes. Remove from oven and allow to cool until squash can be handled. Scoop flesh into a bowl and set aside.<\/p>\n<p>Melt butter in a pot over medium-high heat. Cook onion, carrot, and garlic in melted butter until soft, 5 to 7 minutes. Pour chicken stock into the pot; add the squash.<\/p>\n<p>Bring the mixture to a simmer and cook for 20 minutes.<\/p>\n<p>Pour mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth and return to pot.<\/p>\n<p>Stir half-and-half, nutmeg, and cinnamon through the blended soup; season with salt and pepper.
