{"id":1158,"date":"2021-11-07T18:45:30","date_gmt":"2021-11-07T14:45:30","guid":{"rendered":""},"modified":"2021-11-07T18:45:30","modified_gmt":"2021-11-07T14:45:30","slug":"CantBelieveTheyreVegan-Meatballs","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/11\/07\/CantBelieveTheyreVegan-Meatballs\/","title":{"rendered":"Can&#8217;tBelieveThey&#8217;reVegan\u00a0Meatballs"},"content":{"rendered":"<p>Ingredients:<br \/>\n   Kosher salt<br \/>\n  1 1\/2 cupsdried brown or green (not French\/Le Puy) lentils, rinsed, drained, and picked through<br \/>\n  2 tablespoonschia seeds<br \/>\n  3 garlic cloves, smashed and peeled<br \/>\n  1 medium red or yellow onion, peeled and quartered<br \/>\n  3\/4 cuppanko<br \/>\n  1 tablespoonnutritional yeast<br \/>\n  2 teaspoonsdried oregano<br \/>\n  2 teaspoonsfennel seeds<br \/>\n  1\/2 teaspoonred pepper flakes (optional)<br \/>\n   Freshly ground black pepper<br \/>\n  6 tablespoonsextra-virgin olive oil, plus more as needed<br \/>\n   Marinara sauce, for serving (optional)<br \/>\n   Cooked pasta or toasted bread, for serving (optional)<\/p>\n<p>Directions: <\/p>\n<p>Fill a medium saucepan with water and bring to a boil over high heat. Add a few big pinches of salt and stir in the lentils. Cook until tender but not mush, about 15 minutes, then drain well. While the lentils are boiling, combine the chia seeds with 5 tablespoons of water in a small bowl and let sit for at least 5 minutes\u2014it will become gelatinous. Transfer the cooked lentils to the bowl of a food processor along with the garlic and pulse until finely chopped and starting to mush but not completely pur\u00e9ed. Scrape into a large bowl.<br \/>\nPlace the onion in the food processor and pulse until finely chopped (but not pu\u00e9eed!), then transfer to the bowl with the lentils. (You should have \u00be to 1 cup, or 6 to 8 ounces\u2014if you have more, save it for another use.) Stir in the chia mixture, nutritional yeast, oregano, fennel seeds, red pepper flakes (if using), a big pinch of salt, and lots of black pepper. Pick up a handful of the mixture and squeeze it in your hands\u2014it should hold together without trouble.<br \/>\nForm the mixture into 1\u00bd-inch balls with your hands and place on a sheet pan. Transfer the pan to the refrigerator and chill for 20 minutes.<br \/>\nHeat the oven to 400\u00b0F. Heat 3 tablespoons of olive oil in a medium or large nonstick skillet over medium-high. Sear half of the meatballs on all sides (be careful turning them\u2014they\u2019re more delicate than a regular meatball!), 6 to 9 minutes total, adding another splash of oil to the pan if it starts getting dry, then return the meatballs to the sheet pan. Add the remaining 3 tablespoons of oil to the pan and repeat with the second batch. Bake the meatballs for 15 minutes, until warmed through and dried out a bit.
