{"id":1080,"date":"2021-11-04T23:24:19","date_gmt":"2021-11-04T19:24:19","guid":{"rendered":""},"modified":"2021-11-04T23:24:19","modified_gmt":"2021-11-04T19:24:19","slug":"Baked-Eggplant-Parmesan","status":"publish","type":"post","link":"https:\/\/331333.xyz\/index.php\/2021\/11\/04\/Baked-Eggplant-Parmesan\/","title":{"rendered":"Baked Eggplant Parmesan"},"content":{"rendered":"<p>Ingredients:<br \/>\n2 eggplant, peeled and cut into 1\/2-inch slices<br \/>\n1 tablespoon salt, or as needed<br \/>\n1 cup Italian-style bread crumbs<br \/>\n\u00bc cup grated Parmesan cheese<br \/>\n2 eggs, beaten<br \/>\n1 (28 ounce) jar garlic-and-tomato pasta sauce<br \/>\n\u00bc cup grated Parmesan cheese<br \/>\n1 (16 ounce) package shredded mozzarella cheese, or as needed<br \/>\n\u00bd teaspoon dried basil<\/p>\n<p>Directions:<br \/>\nPlace eggplant slices in a colander; sprinkle both sides of each slice with salt. Allow to sit for at least 3 hours. Wipe excess moisture from eggplant slices with paper towels.<\/p>\n<p>Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.<\/p>\n<p>Mix bread crumbs and 1\/4 cup Parmesan cheese together in a bowl.<\/p>\n<p>Dip eggplant slices in beaten egg; coat with bread crumb mixture. Arrange coated eggplant slices in a single layer on the prepared baking sheet.<\/p>\n<p>Bake in the preheated oven until lightly browned and crisp, about 5 minutes per side.<\/p>\n<p>Cover the bottom of a 9&#215;13-inch casserole dish with a layer of spaghetti sauce; top with a layer of eggplant slices. Sprinkle with about 1 tablespoon of the remaining Parmesan cheese and 1\/3 the mozzarella cheese. Repeat layers with remaining ingredients, ending with a cheese layer.
