Ingredients:
For the crunchy seed clusters:
1/4 cuptoasted sesame seeds
1/4 cuproasted, salted pepitas
1/4 cuptoasted, salted sunflower seeds
1 tablespoonmaple syrup
2 teaspoonssoy sauce
1 tablespoonolive oil
For the bagel bar:
3 bagels; 2 sesame and 1 everything
1 pat salted butter
2 ribbons of cured salmon
1/2 Persian or english cucumber, sliced into ⅛-inch-thick rounds
1/2 avocado, pitted and thinly sliced
Olive oil, for frying
1 large egg
Chili crisp
2 tablespoonstahini
2 tablespoonspomegranate seeds
2 tablespoonsplain cream cheese
2 radishes, thinly sliced
1 handful dill fronds, trimmed
2 tablespoonshummus
3 cherry tomatoes, thinly sliced into rounds
2 tablespoonsGreek yogurt
1/2 banana, thinly sliced
2 tablespoonscrunchy seed clusters (recipe below)
Freshly cracked black pepper, to taste
Flaky sea salt, to taste

Directions:

Preheat the oven to 375°F. In a medium bowl, stir together all of the seeds, maple syrup, soy sauce, and olive oil until combined.
Spread the seed mixture out on a parchment-lined sheet pan and roast for 9 minutes or until deeply burnished. At the 5 minute mark, scoot the centermost mixture out to the edges and bring the darker parts from the perimeter to the center for even roasting. Once it is deeply golden, cool the mixture fully on a wire rack. Store in an airtight container for up to a week.
Prepare the bagel bar: Slice bagels in half and toast until golden, about 5 minutes.
For the salmon bagel: Add a slick of butter to an everything bagel half and arrange salmon ribbons on top. Dot with cucumber slices and season with freshly ground pepper.
For the fried egg bagel: Arrange the avocado slices on an everything bagel half. Get a small skillet hot over high heat. Drizzle olive oil and swirl to coat. Add the egg—it should sizzle on contact—and fry the egg for 3 minutes, basting the egg white where it meets the yolk. Once the fried egg is crispy around the edge, transfer it onto the avocado and spoon chili crisp over top.
For the radish bagel: Add a schmear of cream cheese and arrange radish slices on top. Add dill fronds, then sprinkle flaky salt and pepper.
For the hummus bagel: Slather hummus across a sesame bagel, top with tomato slices, and season with flaky salt and pepper.

For the banana bagel: Spread Greek yogurt onto a sesame bagel half. Layer banana slices, then break the roasted seed mixture into clusters and arrange onto the banana.

Arrange all the bagels onto a serving platter and eat at once.
