Ingredients:
For the spiced apple syrup:
1 1/2 cupsturbinado or raw sugar
1 1/2 cupsapple juice
1 cinnamon stick
2 whole cloves
1 (1-inch) piece of fresh ginger, peeled
Zest of 1 lemon
For the fizz:
2 ouncesgin or Seedlip Spice 94
1/2 ouncespiced apple syrup
1/2 ouncelemon juice
2 dasheswalnut bitters
1 ounceclub soda
Thinly sliced apple or lemon twist (optional, for garnish)

Directions:

To make the spiced apple syrup: Place all of the syrup ingredients into a medium saucepan and bring to a boil. Reduce the heat and simmer for 10 minutes.

Remove from the heat and allow to cool to room temperature. Strain into jars and refrigerate until ready to use.
To make the fizzes: Fill a cocktail shaker with ice. Add the gin (or Seedlip), spiced apple syrup, lemon juice, and bitters. Shake vigorously. Strain into a chilled rocks glass filled with ice and top with club soda. Garnish with an apple slice or lemon twist.
